Snack Attack

Cosmic Carrot Dip

Serves: 12 portions

Recipe Time: 15 minutes

What you need

  • 3 Cup Diced Carrots
  • 1 ½ Cup Chickpeas
  • 2 Tbsp Olive Oil
  • 1 tsp Minced Garlic
  • 2 Tbsp Lemon Juice
  • 2–4 Tbsp Water, as needed for smooth texture

What you do

  1. Steam carrots until soft (8–10 min). Drain well.
  2. In a food processor, combine cooked carrots, chickpeas, olive oil, garlic, and lemon juice.
  3. Blend until very smooth, adding water a little at a time until creamy.
  4. Taste and adjust: add more lemon for brightness, or a drizzle of olive oil for extra smoothness.
  5. Serve with pita wedges.
