Vibrant Vegetarian Meals

Zingy Veggie Ziti

Recipe Time: 35–40 minutes

What you need

  • 4 Cup Penne Pasta, dry
  • 4 Cup Marinara Sauce
  • 2 Cup Cooked Lentils
  • 2 Cup Ricotta Cheese
  • 1 Cup grated Parmesan Cheese
  • 3 Cup Shredded Mozzarella Cheese, divided
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • ½ tsp Dried Thyme
  • 1 tsp Minced Garlic
  • 1 Tbsp Olive Oil

What you do

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. Cook penne until just al dente. Drain and set aside.
  3. In a large bowl, mix cooked penne, marinara sauce, and cooked lentils until evenly combined.
  4. In a separate bowl, combine ricotta, parmesan, two thirds of the mozzarella, oregano, basil, thyme, garlic, and olive oil. Mix until smooth.
  5. Gently fold the cheese mixture into the penne-lentil-sauce mixture until well combined.
  6. Pour into the prepared baking dish and sprinkle the remaining mozzarella on top.
  7. Bake uncovered for 25–30 min, until bubbly and golden.
